Candied Pecans . . . these sweet little nuggets are easy to make, and perfect for tossing in salads, or just for snacking!

Candied Pecans Recipe (1)

I love ordering salads at restaurants that come with candied nuts of any kind. They add such a yummy crunch and hint of sweetness that I just can’t resist! I decided it was high time I started making them at home so I can add them to salads any time I want.

I found several recipes for candied pecans online, but some of them had too much sugar, some had to be baked in the oven, some of them just looked too complicated. So I came up with my own recipe.

How to make Candied Pecans on the stove:

It is so simple to make candied pecans with this method. Just toss all the ingredients in a non-stick skillet, then cook over medium low heat until the pecans start to brown.

In a few minutes you will have a pan full of absolutely scrumptious candied pecans.I discovered that these babies are good for more than tossing in salads. They are incredible just on their own.

I should have made a double batch, because I can’t stop eating them, and neither could the rest of my family. They are a perfect snack, especially if you struggle with eating enough protein like I do.

How to store candied pecans:

-Candied pecans should last for about two weeks if stored in an airtight container, but they are best fresh. They will last a couple weeks longer if stored in the fridge. You can also store them in the freezer for about 2 months.

FAQs

Why are my candied pecans so sticky? ›

The sugar needs to bake long enough to caramelize and form a brittle coating on the nuts. How do you fix candied nuts that are too soft and sticky? You can place them back into the oven for 5 to 15 minutes or until they dry out more. They will continue to firm and dry out as they cool.

What is the difference between candied pecans and praline pecans? ›

Praline pecans are just one variety of candied pecans. These pecans have a tasty coating or glaze and are also referred to as flavored pecans.

How long will candied pecans stay fresh? ›

How long will candied pecans keep? They will keep for up to two weeks in an airtight container at room temperature, at least three weeks in the refrigerator, or up to two months in the freezer. No matter where you store them, keep in a tightly sealed, airtight container.

Should I soak pecans before baking? ›

Wet pecans allow the salt to stick easily to the nuts. Plus, soaking nuts helps neutralize enzyme inhibitors, which can harm your digestion, and reduce phytates, which decrease nutrient absorption. Just submerge your nuts in water while the oven is heating up and you'll be good to go.

How to make candied pecans less sticky? ›

Pecans too sticky: If your nuts are still sticky after cooling, heat your oven to 325° F and bake for 5 to 10 minutes to help harden the candy coating.

How to keep candied pecans from sticking together? ›

Under-cooking the pecans is the likely cause of stickiness, but the risk is low when they're oven-baked. After the sugar-coated nuts have darkened and turned very fragrant, about 20 minutes in the oven, stir the pecans and separate any pieces that have stuck together. Continue to bake for an additional 20 minutes.

Are candied pecans still good for you? ›

Yes, they add more fat and calories to your salads, but they full of the heart-healthy fats and tons of nutrients (thiamine, phosphorous, zinc, magnesium, manganese, iron, copper and Vitamin E).

Why won't my pralines get hard? ›

The simple answer is that there is too much moisture in your candy. One or more factors could be contributing to this problem. In hard candy making, it is important to cook all the water out of the sugar/corn syrup/water mixture.

How do you soften pecan pralines? ›

Since the problem is mostly that the sugar in the pralines gets hard and crystallized, you might try softening them the way you'd soften hard brown sugar. Place a terracotta sugar saver in the container or something else that's slightly damp, like a few slices of apple or a slice of fresh bread.

How can you tell if pecans are rancid? ›

Fresh pecans have a distinct aroma, characterized by their sweet, nutty scent. They should have a firm, almost crunchy texture and a rich golden or amber color. On the flip side, bad pecans may show signs of spoilage, such as a rancid smell, a shriveled appearance, or a soft and rubbery texture.

Do candied nuts go bad? ›

Ba-dum-dum. Okay, all bad dad jokes aside, these candied walnuts will last quite a while. All nuts do go rancid eventually, but as long as you cool them completely and then store them in an air-tight container, they should be good for about a month. Can you vacuum seal candied pecans? ›

Make These Candied Pecans in Advance

Storing: For best taste and freshness, store these tasty snacks in an airtight container, such as a glass mason jar or a vacuum-sealed plastic container. They will keep for 2-3 weeks at room temperature.

Why do people boil pecans? ›

You'll find out fast that boiling pecans lessens the likelihood of the shell shattering into a lot of smaller pieces.

Why do my pecans taste bitter? ›

Pecans have two sources of bitterness -- naturally occurring tannins in the kernel and pieces of corky material from the inside of the nut which can adhere to the kernel. Some of the tannin and all of the corky material can be removed by washing the kernels before cooking.

Why do you soak pecans in water? ›

Improvement in Taste

After a couple of hours, much of the dust, residue, and tannins from the skins are released into the water and the nut emerges with a smoother, more palatable flavor. You'll notice that soaked walnuts do not have that astringent, mouth-puckering taste to them.

How to make nuts less sticky? ›

Why are my caramelized nuts sticky? Candied nuts made with sugar remain sticky if you haven't cooked them long enough. If you are using a sugar-free sweetener, you may need to leave the nuts out to dry for a few hours until they fully harden.

Why are my candied nuts wet? ›

If your candied pecans are sticky, it is likely because the sugar syrup coating has not completely hardened. The syrup may still be wet, or it may have started to crystalize. If the syrup is still wet, you can try putting the nuts in the oven for a few minutes to help the syrup harden.

Why is my pecan pie gooey? ›

If the filling is flowing in a wavy movement from the center to the edge, your pie isn't set quite yet. Wait for the moment when the center of your pecan pie gives you just a little jiggle, like the stable but slightly wiggly movement of Jell-O when you give it a gentle shake.

What causes stick tights on pecans? ›

Scab infections of the shucks may also produce “stick tights,” a condition in which the shuck does not separate from the nut during harvest. Symptoms of powdery mildew are most obvious when the nuts become covered with a white, fuzzy growth on the surface (Figure 3).
