Traditional Chinese wonton wrappers are made from wheat flour, eggs and water, and can be used to wrap around any number of fillings to be cooked in soups or fried. That’s obviously a no-go for anyone eating gluten free.

This dough is super easy to work with!

We have found the thinner we roll the dough the better we like it for steamed or pan-fried dumplings. For crab rangoon, etc. we’re okay with the dough being a bit thicker. These are pork and chive. We also do veggie, shrimp, etc.The key is to make sure the veggies (cabbage, zucchini, etc.) are salted and *all* excess liquid is squeezed out. Same goes for tofu. Cheesecloth is your friend.

Gluten Free Wonton Wrapper Recipe

Yield: 10 gluten free wonton wrappers

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • 1 cup gfJules Gluten Free All Purpose Flour
  • ¼ tsp. sea salt
  • 1 egg + 1 egg white
  • 2 Tbs. water

Instructions

Whisk together flour and salt in a small bowl; in a separate bowl combine the eggs and water. Slowly stir the egg mixture into the flour with a fork and mix until a sticky dough forms.

Divide the dough in half and cover one half while working with the other.

Prepare a clean counter or pastry mat by generously flouring with more gluten free flour. Flour a rolling pin as well, then turn one half of the dough out onto the floured mat and roll gently in each direction until the dough is evenly thinned, almost so thin you can see through it.

Measure 4 ½ - 5 inch squares and cut with a pastry cutter or butter knife. Layer each square on top of each other on a plate and cover with a damp tea towel while preparing the remaining dough. Re-roll the dough scraps to create more wrappers, so that all the dough is used to make approximately 10 wonton wrappers.

Use wrappers in your recipe before they dry out, or cover and refrigerate for 3-5 days until ready to use in your recipe. They will get somewhat more fragile with refrigeration, so bring to room temperature before rolling and spritz with more water if necessary.

Makes 10 wonton wrappers; recipe is easily doubled.

  2. I tried this recipe twice and it was excruciatingly frustrating to work with.
    Dough was extremely sticky & no matter how much flour I used on my cutting board to roll it out, it would just keep sticking. The more flour I used, the last elasticity the dough had. Just an overall frustrating process.

    • Hi Taylor — sorry to hear about your frustration. Were you using my gfJules Flour? I’ve never experienced that with my flour and this recipe — the dough is always super easy to work with. Check out this article on measuring flour to be sure that your proportions were right in the recipe, as well.

    • Hi Sylvie, yes, you should be able to do that with this recipe since it has the eggs in it. I don’t like using a pasta machine with my gluten free ravioli recipe (egg-free) but I’ve had good success with my other pasta and pasta-like recipes which do contain eggs. Enjoy!

    • Hi Susan, I’d recommend trying aquafaba or one of the commercial egg replacers that’s out now. You can check my article on vegan egg replacers for some ideas!

  6. Tried this to make gf Pelmeni, Russian dumplings. The dough was not as elastic as it needs to be, any ideas on how to adjust to make it that way? It’s a family staple and haven’t tried to make these since our celiac diagnosis this June.

    • When the dough isn’t as elastic as it ought to be, it’s usually because there’s not enough liquid in the dough. You can either try adding a bit more liquid, or switch to another recipe like my recipe for gluten free pierogi or gluten free ravioli dough. Check out those and see if either looks more like the Pelmeni recipe you’re used to.
