This Taco Crock Pot Hashbrown Casserole recipe is super simple and really delicious! It is sure to be a family favorite the first time you make it!

This an incredibly easy recipe, but it is also a one pot meal. So dinner is done in one fell swoop! Easy to fix and easy to clean up! A win win all around!

How to Make Taco Hashbrown Casserole in a Slow Cooker

At the end of last year, I made a Taco Crock Pot Tater Tot Casserole recipe for you guys that was an instant favorite in my family (both at my house and when I shared it with my extended family while we were out in Texas) and with our readers. Your response to that recipe got me thinking of other recipes that will satisfy your palate and be super easy to make. That is how you guys are now seeing this wonderful Taco Crock Pot Hashbrown Casserole! So yummy!

This recipe is a cinch to throw together. Beware though, when your family sees you throwing this recipe together, they are going to go nuts and bug you about how much time is left before dinner until it is dinner time. lol However, you will be the hero of your home when it is time for dinner!

If you area cheese lover, you can always add more cheese to the recipe. In my humble opinion, there is no such thing as too much cheese!

It is in the recipe, but I want to reiterate it here: make sure your country style hashbrowns are still frozen. They will thaw and cook in the crock pot. If you thaw them before you put them in the crock pot, they might be overcooked by the time the cooking time is over.

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 oz packet taco seasoning
  • 10.5 oz cheddar cheese soup
  • 30 oz frozen shredded hashbrowns
  • 2 cups shredded taco style cheese divided

Instructions

  • Brown your ground beef with garlic and drain

  • In a large bowl, mix all ingredients together, except for 1 cup of shredded cheese and pour into lightly greased 6-quart crock pot or casserole crock pot

  • Top all the ingredients with your remaining cheese

  • Cover and cook on low for 4-5 hours or high for 2-2.5 hours

  • If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top

      I haven’t tried putting this together the night before. My only concern is how it would change the cooking time. In the original recipe, the hashbrowns are frozen when the cooking time starts. If it is in the fridge overnight, the hashbrowns would thaw. If you give it a try, I would watch it closely to adjust the cooking time as needed.

    I’m not sure if I’m missing it somewhere but what is the serving size? I’m diabetic so I have to take insulin for my carbs but I can’t find how much a serving size is.
