1. This is cooling as I type. I snagged a piece from it because it smelled so good and I couldn't resist. I also made it in a loaf pan and I have put a lime glaze on top after poking holes in it so it could soak in. I didn't use the peanuts just out of personal preference. You have to try this one if you like Limes!!

 2. This is a very easy cake to do since i usually have everything on hand. I used key limes and added about 3 tsp of zest in for looks. I also double glazed it with a lime glaze I found on another site. Like some of the others, I made it in a loaf pan. Thanks for sharing this recipe!

 3. this cake was so great! it wasn't as fluffy as some other reviewers said theirs was, but that's probably because i hand beat the batter....very delicious lime taste :)) my lime gave 3 tbs of juice and a very delightful light 'crust' baked on the outside--- will definitely make again THANK YOU! ^^

 4. Yummy and wonderful recipe! I sprinkled salted co*cktail peanuts on top before baking. I love the sweet, lime fluffy-ness of the cake and the crunchy-ness of the peanuts. Perfect for a crunchy, salty, sweet lover like me! Thanks for an easy and great recipe!

 5. What a delightful little cake. Dense yet soft with a very nice twang from the lime. Baked in in a square cake pan and will try it in a loaf pan next time. Did not use any frosting or peanuts (we are not very "frosty" here in Europe). Thanks for posting.

Tweaks

 1. Wow, so easy and so tasty and refreshing! A nice different take on a cake, very light. I used oil in place of butter, added the zest of the lime I used for juice, and made it gluten free using 1 c rice flour and 1/2 c tapioca starch. I think I forgot to add xanthan gum and the recipe still turned out well!

 2. This was delcious!!!!The lime flavor was very soft but just enough so you could taste it. I made a couple of changes by using vanilla yogurt instead of butter and 1 tbsp bottled lime juice instead of fresh. I baked mine in a 8x8 and it was done after 21 minutes of baking. Thanks for the recipe Chabear01!

That baby in the picture...yep that's me some eon's ago...not even gonna tell you how many. I live in the Sierra Mountains bordering a National Forest with my chickens and goats. My wonderful husband who passed on October 10,2006 was extremely ill with several terminal illnesses and is sorely missed. You will find "Renal Failure" cookbook with recipes collected for his meals, these seem to also be pretty good for Diabetic Diets and some for Heart Healthy Diets. If you go to My Cookbooks...you will find one "From the Grey Cookbook" This is a collection of my Dear Late Mothers recipes...and in memory of all the wonderfully delicious meals she used to cook for us.I Love to cook good food, but Italian is one of my specialties. Baking is my fun...pies, cookies, and making candy. Don't do cakes, nobody here eats them. But make a cheesecake and it disappears.Gardening is a hobby, and love to run out and pick fresh vege's and herbs to add to my meals. Besides my dogs, cats, fish, 3 goats, I have a really good collection of chickens, and the ladies present me with a steady supply of fresh eggs, and fertilizer for the garden.
