Browned Butter and Lime Salmon - Recipe Diaries (1)

Have you ever filleted a salmon or fresh fish before? I like to fish every now and then, but it can be quite a disgusting task. Fishing licenses are kind of expensive here and it's not really worth it if you're only going to go about 3 or 4 times a year. I don't know what's worse about fishing. Putting the worm on the hook or gutting the fish when it's ready to be cooked? If you're wearing gloves it wouldn't be that bad. Meh..... I'd rather go to a fish monger and get it myself.

Reasons why I love salmon:

  • You can buy it frozen in individual packages and they're perfect for people who live with one or two people.
  • Salmon doesn't take long to cook at all in the oven, about 10 minutes at 400 degrees.
  • It has a lot of healthy stuff in it, like omega 3s and fatty acids.
  • It's packed full of protein.

When I buy salmon, I like to buy it in bulk at Sam's Club for about $20.00 a bag. The same thing goes with shrimp. Then I like to doctor the salmon up with spices and different sauces. For this salmon, I browned some butter and added some lime, and garlic to it. Served it on top of some rice and called it a good day. The salmon was so nice and refreshing.

Do you guys watch the Next Food Network Star at all? I am kind of ticked off that Alton Brown isn't doing it this year. He is one of my favorite chefs to watch on Food Network and now it's just Giada and Bobby Flay doing it this year. There's nothing wrong with that though. I'm getting kind of tired of seeing the contestants win and not even seeing a show of their's on that network. That happened to Justin Warner and the cowboy dude named Lenny that won last season. He got into trouble for saying some really bad things on a forum and that is the reason he never made it.
