Ingredients

Carbquik Pizza Dough Ingredients

  • 4 ounces cream cheese, softened
  • 2 eggs
  • 1/4 cup parmesan cheese, 1 ounce (the kind in a can)
  • 1/4 teaspoon garlic powder
  • 1/2 cup CarbQuik Low Carb Baking Mix
  • 1/2 cup almond flour, 2 ounces
  • 4 to 8 ounces mozzarella cheese, shredded

Toppings

  • 1/4 cup pizza sauce
  • 8 ounces mozzarella cheese, shredded
  • 4 ounce can mushrooms
  • 2 ounces pepperoni slices
  • 1/4 pound Italian sausage, browned and crumbled
  • 1/4 cup green pepper, diced
  • Italian seasoning, to taste
  • Garlic powder, to taste

Instructions

  1. Cut a circle of parchment paper to fit a 14 to 15-inch round pizza pan.
  2. Spray the pizza pan with cooking spray to help the parchment stay put.
  3. Place the parchment paper in the pan.
  4. Whisk cream cheese and eggs until smooth.
  5. Add remaining Carbquik Pizza Dough Ingredients except mozzarella until well combined.
  6. Stir in mozzarella.
  7. Drop the dough by large spoonfuls all over parchment-lined pan.
  8. Cover with two sheets of plastic wrap that have been crossed so that the entire surface is covered.
  9. With rolling pin, roll dough to the edges of the pan making it an even thickness.
  10. Remove plastic wrap.
  11. With a rubber spatula, push the dough up and away from the edges of the pan by ¼-½ inch.
  12. If the dough goes all the way to the edges, it can bubble over in the oven or go under the parchment paper.
  13. Bake at 400° F for 18-20 minutes or until golden brown.
  14. Let stand 10 minutes or chill several hours (can probably be wrapped and frozen at this point, but I haven’t tried it).
  15. Add toppings and bake at 375 degrees about 15-20 minutes longer or until toppings are bubbly and slightly browned.
  16. Serve piping hot.

    I pulled out the old bread machine and used carbquik( 1/2 bread flour and 1/2 carbquik) and replaced milk with soy milk, used 1/2 sugar with splenda……a sweet bread and it was awesome.
    Going to experiment using 3/4 carbquick.

    Okay, in the recipe it says 4-8 oz. mozzarella Cheese. What does that mean? 4, 8 oz. cheese blocks? Or does that mean 4 to 8 oz of mozzarella cheese?

    Overall very good. I should’ve rolled it out a little thinner. We like really thin crisp crust. I precooked the crust for about 12 minutes. Next time, I’ll roll thinner, lower precook heat and precook longer.
